What is Gluten?
Gluten is a general name for the proteins found in wheat (wheatberries, durum, emmer, semolina, spelt, farina, farro, graham, KAMUT® Khorasan wheat, and einkorn), rye, barley, and triticale – a cross between wheat and rye. Gluten helps foods maintain their shape, acting as a glue that holds food together. Gluten can be found in many types of foods, even ones that would not be expected.

There are gluten-free grains
Not all grains contain gluten, though. Some examples of gluten-free grains are sorghum, millet, brown rice, buckwheat, wild rice, amaranth, quinoa, corn (polenta) and teff. Oats are also gluten-free but can be contaminated during processing.

Facts
More than 55 diseases have been linked to gluten, the protein found in wheat, rye, and barley. It’s estimated that 99% of the people who have either gluten intolerance or celiac disease are never diagnosed.
It is also estimated that as much as 15% of the US population is gluten intolerant. Could you be one of them?
Symptoms
1. Digestive issues such as gas, bloating, diarrhea and even constipation. I see constipation particularly in children after eating gluten.
2. Keratosis Pilaris, (also known as ‘chicken skin’ on the back of your arms). This tends to be a result of a fatty acid deficiency and vitamin A deficiency secondary to fat-malabsorption caused by gluten damaging the gut.
3. Fatigue, brain fog or feeling tired after eating a meal that contains gluten.
4. Diagnosis of an autoimmune disease such as Hashimoto’s thyroiditis, Rheumatoid arthritis, Ulcerative colitis, Lupus, Psoriasis, Scleroderma or Multiple sclerosis.
5. Neurologic symptoms such as dizziness or feeling of being off-balance.
6. Hormone imbalances such as PMS, PCOS or unexplained infertility.
7. Migraine headaches.
8. Diagnosis of chronic fatigue or fibromyalgia. These diagnoses simply indicate your conventional doctor cannot pinpoint the cause of your fatigue or pain.
9. Inflammation, swelling or pain in your joints such as fingers, knees or hips.
10. Mood issues such as anxiety, depression, mood swings and ADD.

Our Experience
Our family members with Crohn’s and food allergies have these symptoms. That’s why we cut gluten and wheat out of our lifestyle. They feel so much better and are having a good quality of life. And I feel so much better cutting that out of my diet.
When you go gluten-free and wheat-free – it means you should eliminate it 100%. The repercussions are not worth it when cheating. Our doctor was explaining what happens to your intestines if you cheat. It’s like you have this fire pit of hot coals calmly dancing with the beautiful colors. There is no flame, just the heat and pretty color of coals. Then you have one bite of gluten or wheat or whatever your allergy is, and now it’s like a huge fire that had kerosene thrown onto it. This totally takes you down and makes you feel so ill. Now it will take days, even weeks to calm that fire back down. But you always have the kindling going in your intestines when you have these diseases and illnesses. And that is what we call a “Flare up”. This makes our kids very ill. We decided that it’s not worth it.

Know how to read the ingredient labels
Read ingredient labels carefully. Gluten has been found in barley malt, chicken broth, malt, vinegar, some salad dressings, veggie burgers that are not specified gluten-free and soy sauce. I know it’s in a lot of things, but you and your body will be happy you eliminated it.
